SUMMERTIME PINEAPPLE COCONUT CAKE


A friend asked for this recipe. It is awesome. I won't be having any as I have been low-carbing for the past 5 months. I have lost 25 pounds! Love it!


SUMMERTIME PINEAPPLE COCONUT CAKE
(another 'cool' summertime cake - needs refrigeration)
1 box cake mix
1 lg. box instant vanilla pudding
1 lg. can crushed pineapple
1 (12 oz.) container Cool Whip
1 can coconut
Make cake mix according to directions on box. Bake in an oblong pan (13 x 9 inches) that has been sprayed with Pam. After cake has cooled, punch with fork and pour pineapple and juice over top of cake. Mix pudding according to directions and pour over pineapple. Spread Cool Whip over pudding. Top with coconut.
